Abstract
Ciliwung River is one of the rivers that flows in Jakarta. The Ciliwung River is a polluted river. One of the pollutants in the Ciliwung River is heavy metals (Cd, Hg, Pb). Heavy metals affect organisms that live in rivers, including broom fish (Pterygoplichtys pardalis). Pterygoplichthys pardalis has been shown to contain heavy metals. Heavy metals will eventually accumulate through the bioaccumulation process and are harmful to humans. This research was conducted to process Pterygoplichthys pardalis from the Ciliwung river into several processed food products, namely shredded, dumplings and bone meal. The processed product is then tested for metal content using the XRF method. The results of the metal content analysis showed that the concentrations of Cd, Hg, and Pb exceeded the maximum limit set by SNI. This research is useful to find out information on metal levels of processed products of Pterygoplichthys pardalis from the Ciliwung river and potential hazards to human health.
