Abstract

In 2023, community service initiatives aimed at producing cassava donut products in Kampung Cahaya were designed to support women in enhancing the quality and competitiveness of these products. However, there are challenges, including the limited shelf life of the donuts and the absence of a distribution permit (P-IRT number), resulting in constrained marketing efforts. To address these issues, there is a need for more standardized product innovations that can be produced feasibly and marketed effectively. The proposed solution involves obtaining a P-IRT permit for frozen cassava donuts specifically for the women of Kampung Cahaya Village. This initiative aims to assist these women in standardizing their cassava donut products through compliant packaging labels and ensuring that their production facilities meet the required inspection criteria. The implementation of the community service project focused on the management of P-IRT involved six women and was carried out in two main stages: (1) enhancing the quality and knowledge of women regarding effective processing systems and standards for frozen cassava donuts, and (2) conducting food safety training alongside product permit acquisition. As a result of the P-IRT management assistance activities, there were notable improvements in product standardization, evident through the use of packaging labels that adhered to the established criteria. Additionally, there were advancements in production techniques and facilities that complied with the required standards. Ultimately, these improvements contributed to an increase in the potential income for the families of women in Kampung Cahaya Village.
