Abstract

Fish is a raw material for food processing with nutritional content in the form of protein, fat, minerals and vitamins that are good for humans. One fish that has not been utilized properly is plecos fish (Pterygoplichthys pardalis) with abundant population in the Ciliwung River area. P. pardalis have a high protein content of more than 20% and a low fat content of less than 5%. This makes P. pardalis potential to become raw material for food processing such as shredded. The purpose of this study was to analyze the proximate content in the form of ash, water, protein and fat from shredded plecos fish. The method used in the form of analysis of ash content, water content, protein using the Kheldahl method and fat using the extraction method. Nutritional content results obtained 5.47% ash content, 2.24% water content, 39.08% protein and 30.59% fat. Ash, water and protein content meet the requirements of abon SNI 7690.1 2013 quality. Meanwhile, fat does not meet the requirements of shredded according to Indonesian National Standard (SNI).
